- 1-1/2 teaspoons butter, softened
- 2 tablespoons sugar
- 2 tablespoons mashed ripe bananas
- 2 tablespoons sour cream
- 1/4 egg or 3 tsp. egg substitute
- 1/4 cup and 1 teaspoon flour
- 1/8 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/8 teaspoon salt
- 1/8 teaspoon vanilla
- 1/8 teaspoon cinnamon
- 2 tablespoons chopped walnuts
Oven: 350 degrees F
- Cream butter and sugar in bowl with a fork. Mix in sour cream, egg or egg substitute and banana. Stir in dry ingredients just until moistened. Stir in walnuts.
- Pour batter into greased or lined muffin cup or mini loaf pan.
- Bake for about 20-25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan.
